Hi Emy,
Certain berries can be a great crop to grow in Parker. Raspberries are definitely the easiest and most reliable in our climate, though currants and blackberries would be options too. Strawberries do well if you can offer some protection through the winter (like floating row covers or a low tunnel). Don't waste your time trying to grow blueberries; the soil and weather are not at all suited for them.
More information plus some variety recommendations can be found in this CSU Extension resource: https://extension.colostate.edu/resource/raspberries-for-the-home-garden/
I hope this is helpful!
Cordially,
John
