What is making my green peppers turn grey? Can the plants be saved?

The photo is too small for us to see any detail (images are best shared that are at least 1MB in size), but it superficially resembles feeding damage from mites (either cyclamen mites or broad mites, both of which are so tiny magnification is needed to see them). You can learn more on our Mites in Home Garden page; the feeding damage image slide show includes a picture of pepper damage from these mites. These particular types of mites can be hard to control since they can more easily evade topical sprays by hiding in cracks and crevices of the plant, but sulfur dust, sold as a pesticide (not a soil amendment) may help to suppress broad mites enough to minimize damage to the fruit.
