My year old amaryllis bloomed nicely in February. It's been enjoying outdoors since May. After a rainy week in July bloomed again! Should I let it stay outside till Sept., then give it a dormant period? Or now? Or wait till Oct.-Nov.?

The short answer to you question is, let it stay outside and flourish! It is storing up energy for the next blossoms.
After an amaryllis blooms, you should remove the dead flowers but leave the the thick stalk until it yellows, as it is still fueling the plant via photosynthesis. The amaryllis does not need a dormant period in order to bloom again, but you can control the timing of the bloom (i.e. for a winter bloom) by putting it into dormancy in the fall. I have a number of amaryllis that have come to live with me over the years. I leave them alone except for occasional watering and fertilizing, and I never bother with dormancy. I love the way they surprise me by blooming when I least expect it. Good luck with yours!
