Chinese Elm #930917

I'm looking to plant something that can outcompete a small thicket of Chinese elm. It's a sloped, west facing area in western Hennepin County. I cut the saplings down yesterday and am will let the downed trees decompose where they are. I do have dogs and want to be wary of anything that could be potentially toxic to them if they eat anything off the tree. My last request is that I don't want anything that is too tall (less than 7ish feet max) since taller trees obstruct a nice view from the residence over a valley. Thank you!

Hopefully your work cutting the invasive elms will buy you some time. If they come back, UMN Extension has a good resource for woody species control. 

If 7 feet is your max height, that will eliminate most trees, but there are plenty of shrubs that can grow decently fast. 

As for poison concerns, I would talk to your vet. I am not qualified to say what is poisonous or not to dogs. I used the ASPCA's toxic plant list to check my selections, but your vet would know best. Have him/her double check these recommendations:
