Hi, Denise -
Peach blossoms are very susceptible to late frost. The further along in development the blossoms are, the less freeze-tolerance they have. Here is an information sheet with a chart of blossom susceptibility to frost damage as a function of development stage and temperature: Frost Protection – IPM Pest Advisories.
The most practical protection method for a small number of trees is to completely cover them with cloth such as sheets or frost blankets to trap warmth until the freeze danger passes. Do not use plastic because it is not insulating and it traps moisture. Applying heat tape around the bases of the trees is another possibility: How To Keep Peach Trees From Freezing: Best Practices For Protecting Your Blossoms.
