Selling meat to the public #924172

Good morning, I’m searching for guidance on where to start when trying to sell beef & pork privately. Not 1/4 & 1/2’s but by the piece. I reached out to a few farmers markets in the past but they weren’t looking for vendors at the time. I have been approached to be a vendor for this up coming year. But I have no idea where to start or how long the process takes. Thank you
