Yes, you sure can! Just make sure all the stuffing is removed first- canning grain products isn't recommended due to the changing thickness and can prevent proper heating. Clearing the stuffing out will also make your broth clearer.
You can find instructions that just use the carcass here: https://nchfp.uga.edu/how/can/preparing-and-canning-poultry-red-meats-and-seafoods/chicken-or-turkey-stock/, or if you have access to the Ball Blue Book, they have instructions that includes vegetables -which is my preferred recipe. Both are delicious! They do differ in processing times, so be sure to follow the recipe. Processing stock and broth does require a pressure canner but if you don't have one, you can easily freeze it instead.
