Hello Carol,
Thank you for reaching out to the UNH Extension Infoline. This UNH extension site describes weasels (ermines) :https://extension.unh.edu/blog/2018/02/looking-weasels
They are carnivores.
The following site has information and pictures of Weasel (ermine) poop or scat: https://wildlifeillinois.org/identify-wildlife/least-weasel/#:~:text=the%20front%20tracks.-,Scat,Behavior%20&%20Ecological%20Role
The following site does list a lot of small critters that could be your issue however it does not distinguish their scat: https://www.extension.purdue.edu/extmedia/fnr/fnr-413-w.pdf
I don't know if you have chickens that are being attacked but the following site lists many small animals that are carnivores :https://extension.okstate.edu/fact-sheets/protecting-small-poultry-flocks-from-predators.html The following site has pictures of their scat: https://www.wildlifetrusts.org/wildlife/how-identify/identify-poo
I hope this information is helpful! Please feel free to reach out with any further questions!
