Hello Katrina,
Thank you for reaching out to the UNH Extension Infoline. If you look at the following site you can see a new bamboo plant : https://fieldreport.caes.uga.edu/publications/B1357/growing-bamboo-in-georgia/
Even though it is not your container bamboo, you can see the new shoot is pointy and straight up. The following site suggests it may be in the mint family although yours are only new shoots with one leaf so it is difficult to tell. The following site has information about one possiblity: https://plants.ces.ncsu.edu/plants/soleirolia-soleirolii/
This site also has information about them and a picture: https://www.missouribotanicalgarden.org/PlantFinder/PlantFinderDetails.aspx?taxonid=287425
Another possible plant is in the mint family : https://plants.ces.ncsu.edu/plants/plectranthus-amboinicus/
It could also be a Chinese money plant: https://plants.ces.ncsu.edu/plants/pilea-peperomioides/
Without more growth it is very difficult to tell from the picture but it does not appear to be a bamboo shoot.
I hope this information is helpful! Please feel free to reach out with any further questions!
