I have a North Star cherry tree that's leaking sap, but otherwise seems OK. I've been trying to find info on this and what, if anything, I can do.

It is likely your cherry tree's running of sap is a symptom of canker. Canker is caused by bacteria. Often a branch with canker must be removed.
