fall planting #919737

Asked October 11, 2025, 8:53 PM EDT

Is there anything to plant with my garlic for harvest in winter months? I have raised beds. I was thinking along the lines of beets etc.

Hi Linda, thanks for your question. It's probably a little late to try planting now- below freezing temps are expected the rest of the nights this week.
There are a variety of things that have some frost tolerance- once they are established. For example, lettuce, spinach, and arugula can be grown until there is a deep freeze- if planted late august/ early September, you could harvest until there is a hard freeze. The plants only have hardiness once they are mature and exposed to cold temps gradually.
If you were to start some seeds indoors and harden them off, AND had the capacity to cover the plants every late afternoon to trap heat in with them, you have a chance of harvesting some of the above greens- again, the opportunity is much reduced because it's late in the season.

best wishes, Nicole
