Canning onions #915982

Can I chop onions to 1 inch or less and can accordingly, or do I have to use bulb onions that are less than 1 inch? Thank you.

You can can onions that have been cut to 1" diameter or less.  So Easy to Preserve (a University of Georgia Extension publication) provides the canning recipe:
After cutting to 1", wash, then cover with boiling water & bring to a boil.  Boil 5 minutes.  Pack the onions into hot jars (pints or Quarts).  Add 1/2 tsp salt to pints, 1 tsp to quarts (optional).  Fill jar to within 1" from top with boiling water. Remove air bubbles.  Wipe jar rims, adjust lids and process:
Dial gauge pressure canner @ 11 pounds pressure or for a Weighted gauge it is at 10 pounds pressure. 
Process both pints & quarts for 40 minutes (can choose smaller jars if desired but must use the 40-minute processing time as no time is given for smaller jars).
