I have lots of beautiful juicing oranges from the food bank. Id like to 'put-by' some Orange Curd for canning and give them as Gfits as needed. Since there is so much acid I wonder if anyone has the science tested definitive Yes or No along with some Water Bath Directions. TIA! If youre close by and have the knowledge I gift you with one of these Tresures! Cheers!

Currently, a recommended recipe for a shelf-stable orange curd is not available. Updated lemon curd recipes call for BOTTLED lemon juice for a consistent pH, which is important in lowering the risk of bacterial growth.
Note that oranges are lower in acid than lemons and therefore cannot be substituted for lemons in the curd recipes.
You may use orange as a substitute in a lemon curd recipe only if it will be frozen.
