Expert Response

Sorry to tell you that I am not aware of any salad dressing recipes that are research based for home canning.  The ones you mentioned in the Ball Blue Book are just recipes and refrigerated, no canning instructions.

From what I know from 50 years' experience answering consumer questions and teaching food preservation it would be VERY risky because of the oil as well as many of the low acid ingredients added to salad dressing.  High heat from processing would probably also compromise the quality.   Commercially they have very different processes that we cannot duplicate at home.

That said it would be safe to freeze the dressings for long term storage.

By the way, the live hotline has closed for the season, but we do have volunteers that answer the message line so if you can leave a message an a certified Master Food Preserver will return your call.
