Hi,
Do you know which species or cultivar you have? If you have a cultivar it may not come true to seed.
You can clip the seed heads once the petals fall off and the stem underneath is beginning to brown. However, if you want to beat any birds from eating them, you may want to either net them with fine insect mesh, or clip off the heads and let them dry on some paper.
It would be helpful to sow the seeds this fall so they can can go through the cold period this winter.
