Pressure canning corn #884311

Asked September 06, 2024, 1:20 PM EDT

I thought maybe my pressure cooker was out of water while canning quarts of corn so I turned it off and cooled it and opened it up. There was still 1 1/2 liters of moisture in the cooker, 6  of the 7 quarts sealed, 1 had spilled out moisture and some corn.

My question is: the full processing time for corn is 85 min but I turned it off at 60 min to cool.   Are the sealed jars edible as is?   Would theses jars  have a shorter shelf life?   Do I have to reprocess them for the full 90 min ?  I have been shuffled from one safety council to the next with  no answers yet?  Hope someone can advise me.  I am in Canada.

Thank you for your input.

Expert Response

Hello. Sorry it has taken so long to get back to you with an answer. You would have needed to reprocess and that is in its entirety (full process time) within 24 hours. Although the product sealed, because it was not processed the correct time, it is considered unsafe. Generally when product has processed the correct time but does not seal, the recommendation is to reprocess from start (heating product up about 5 minutes, putting into clean sterile, hot jars, de-bubbling, wiping rim, using new flat lid, applying screw band fingertip tight and processing according to the recipe - vent, seal and pressure at 10 psi (weighed gauge) or 11 psi (dial gauge) the total time - as you stated 85 minutes for quarts - whole kernel corn, Also, if product doesn't seal after proper processing, the product can be kept in the refrigerator and consumed within one week, but make sure to boil 20 to 30 minutes before consuming. Product that has not been properly processed or reprocessed correctly should be discarded.

Again, my apologies for this late response, but I hope this helps for future processing.

Sincerely,

Janet Johnson

Hi Janet, thank you for your response, bad news as it is, sounds like not much nutrition would be left to enjoy.   I have kept the sealed  jars in the fridge, so could I also just take it out of the sealed jars, blanch it, shock it and freeze?  It just seems like such overkill to reprocess for eighty min.

I truly appreciate your knowledge and time.

Sincerely Judy
