Using a tested recipe, is it acceptable to substitute ground beef or pork sausage for salt pork when canning baked beans?

Expert Response

Our Extension Food Safety Specialist provided the following: I do not recommend substituting ground beef or pork sausage in place of the salted pork. Ground meat would be smaller pieces than the recommended ¾-inch pieces of salted pork in the tested recipe. Since the ground meat is smaller pieces, this would allow for more meat to be packed into the jar, potentially affecting liquid flow and heat transfer. This could result in slower heating and inadequate heat penetration, leading to underprocessing of the product.
