Bone broth accidentally left out #883190

Asked August 27, 2024, 12:55 PM EDT

Left bone broth pot on stove to cool down and forgot about it. Discovered it next morning. Shall I toss it or can I boil it for a certain amount of time to save it?

Great question!
I'm so sorry to hear this happened. Unfortunately, perishable foods like meat, poultry, and cooked leftovers multiply bacteria rapidly after 20 minutes in the food safety danger zone (between 40f - 140f). It needs to be tossed.

I recommend cooling broth or stock rapidly by pouring it into a shallow pan and cooling it uncovered in the fridge or freezer until it's below 40f. Another method is to use a frozen plastic water bottle in the stockpot to cool rapidly from the inside. Placing the pot in an ice bath, cooling from the outside, and stirring frequently is also effective.

I hope this is helpful. Thank you for Asking Extension!
