Havesting and storing cow pea - black-eyed-peas #879209

I live in Detroit and I am growing cow peas for the first time. The plants are doing wonderfully but I don't know how to harvest the peas and the best way to put them up. Do I need to dry them for storage? Also, do you cook fresh peas differently then dried? I am getting very conflicting information on the web. Thank you for helping!

Fresh cow peas are typically served as a vegetable, like whole green beans are commonly served. The bigger the beans, the tougher the seeds can be and the pod will be stringy.
