Pickle slices vs spears vs whole #878164

Asked July 21, 2024, 7:20 PM EDT

This is a two-part question.  When using a dill pickle recipe, does it matter if the cucumbers are sliced 1/4” thick, cut in to spear, or left whole?  And if cut in to 1/4” thick slices, does it matter if they are made using pint or quart jars?

That is a good question.  One of the issues with slicing the cucumbers is a density issue if the cukes are packed too tightly.  There is a recipe for hamburger dills in the latest edition of the Ball Blue Book that uses sliced cucumbers.  It is only processed in pint jars so I would not recommend quarts.  They also have dill sliced dill pickle recipes on their website. https://www.ballmasonjars.com/blog?cid=sliced-dill-pickles
As long as your recipe has at least a 1:1 ratio of vinegar to water and you don't pack them too tight they should be safe.

Hope that helps.
