French Cut Green Beans #876621

Asked July 10, 2024, 9:42 AM EDT

Every safe, tested pressure canning recipe for green beans indicates "whole or cut into 1" pieces", but none mention French Cut. I'm unsure if it's a density issue so it's not safe, or if it's simply lumped in with green beans and IS safe. Please clarify! Thank you!

Hello,
We do NOT recommend canning French cut green beans due to packing too many in the jar would make it uncertain if the high heat is able to penetrate through the food in the jars with the processing time in the tested recipe. Therefore, follow the procedure as the NCHFP recipe states to “whole or cut or snap into 1-inch pieces”, to insure a safe product. Thank you for your question!
