I read where you should not give canned dog or cat food to chickens as they cannot excrete iron. Is there any truth to this?

The problem is not toxicity, but too high nutrition in excess. A little is just fine, but it should not be a major component of the diet or you'll have fat chickens with some definite impact. Rather like letting them "pig out". Be sure they are getting a food which is more normal to their diet as well.
