Canning Cooked Chicken #860958

Asked March 09, 2024, 10:58 AM EST

The canning resources that I use all say that for canning a jar of chicken in hot pack, one is to cook the chicken until "two-thirds done". That said, some soup recipes just say to use "cooked". I would like to know if it is safe to use fully-cooked chicken that has been broiled, baked, grilled, or even pressure cooked in my home canning recipes.

It is not a safety issue to use already cooked chicken.  It might end up a little drier or tougher.   Cooking it 3/4 done is the recommendation for canning hot pack chicken.

Here is the handout with guidelines for home canning soup safely.
