Sprouted seeds and grains as feed for laying hens #859902

I am interested in feeding sprouted grain and seeds to my mature laying hens (generally 9 months to 3 or 4 years of age) as a significant part of their diet (in addition to commercial layer feed). I have done some experiments with leftover cover crop seed (peas, black oil sunflower, buckwheat, barley, rye, as well as corn), and the enjoyment they seem to get from it (especially in the winter months) is significant. With the size of my flock (between 500-1000 at a time), I would be looking at purchasing grain/seed in bulk and mixing it in house prior to sprouting it. Is there a "recipe" that you could recommend (ideally made up of seeds and grains that are fairly available in MA either as feed or as untreated cover crop) that would provide the appropriate nutrient mix? It is difficult to find information on sprouted seeds and grains online.
They will still have access to commercial layer pellet as well as oyster shell. They also receive produce discards from our vegetable production throughout the year.
This would simply be an additional item that we would add and would look for it to make up no more than 30% of their diet.

Expert Response
While offering sprouted grains seems to be increasingly popular among small-flock poultry keepers, I do not think there has been significant research done to produce the answers you're looking for.
I would lean toward grains with higher protein levels (e.g., soybeans, peas, sunflower seeds), and only feed what they're able to finish quickly. Probably stay under 10% of their total diet.
