Hens can only lay one egg per day. They have a single ovary and oviduct. It takes 24-26 hours to 'assemble' an egg and lay the egg. It starts producing another egg 30 minutes after laying one - unless it is too late in the day and then it will do it the next morning. If you collect eggs at different times each day that can make it seem like two eggs were laid in one day.
