Hello-
We carved pumpkins last night and are excited to roast the seeds. The seeds from one pumpkin were all rotted, so we had to toss those. But another pumpking just had one small circle that was rotting in it, and the seeds appear to be fine other then I'm used to seeds being all white. These ones are brownish in color but no obvious mold or anything.
Is it still safe to roast/eat these seeds?

That often happens when they mature. The seeds in the photo look ok to roast. You might want to crack open a couple before you roast them to see if they look ok inside. Sometimes the pumpkins are over mature, and the seeds start to brown and then will sprout. If they look ok when you open up a couple, go ahead and dry and roast them. After they are dried you can toss them with a little oil and salt and then roast in a preheated 250 degree F. oven for about 10-15 minutes.
