Pressure canning mandarin oranges #852884

Asked October 11, 2023, 3:57 PM EDT

How to pressure can mandarin oranges?

Coos County Oregon

Expert Response

They will be peeled and in sections or in halves. Strings removed and will add a light syrup made from cane sugar to add to the pint or half pint jars.  Should I add some food grade citrus acid to each jar, about a 1/2 tsp or less?

Here is the link to the canning orange sections from the Center for Home Food Preservation.

http://nchfp.uga.edu/how/can_02/grapefruit_orange.html

In these directions, it states: "Wash and peel fruit and remove white
tissue to prevent a bitter taste. If you use syrup, prepare a very
light, light, or medium syrup and bring to boil. Fill jars with sections
and water, juice or hot syrup, leaving 1/2-inch headspace."

So removing all white tissue is the key, and packing in a syrup mix will help.

You do not need to add food grade citric acid.
