What nutrients are present in Trombocino squash? Also what are some ways to use trombocino squash? It seems very adaptable to many types of recipes, fake apple pie, lemon curd, thickener for soups and stews, mix with mashed potatoes. Are there other ways to use? Thank you!

Tromboncino squash is considered a summer squash, usually pale green fading to beige upon maturity. But if left on the vine, can be used as a winter squash as well. It is usually picked about a foot long but can be 3’ or longer, with a curved shape, sometimes called crookneck with a bulb at the end. It is an heirloom variety of squash in the pumpkin/butternut family, popular in Italy, usually used in soup or stew.

Although botanically a fruit, it is used as a vegetable in dishes. It has a buttery flavor much like butternut squash. 2/3 cup has 34 Calories, 1 gm protein and 1.5 gm fiber. It is low in calories with no saturated fat or cholesterol. The skin, seeds and pulp are all edible.

Tromboncino squash is rich in vitamins C and beta-carotene antioxidants that fight aging and disease. Because it is low in sodium and high in potassium, it helps maintain healthy blood pressure. It also contains B vitamins including folate, thiamin, pantothenic acid and riboflavin and minerals calcium, iron, manganese, phosphorus, zinc and trace amounts of  selenium. It contains small amounts of omega-3 fatty acids.

Here are some other ways to use this squash besides those you previously mentioned:

Cube raw for salads (skinned or unskinned) or slice into sticks for dipping

Puree raw for use in hummus or other dips, dice for salsas

Cook as side dish, roasted or boiled, cubed, grilled or mashed, alone or mixed with other vegetables or pasta. Add cubes to soups, stews or marinara sauce

Sliced lengthwise and used in place of noodles in zucchini, or spiralize and use in place of pasta

Puree to make a creamy soup (works well with curry spices) or use as a filling for ravioli

Slice thin and dehydrate, spice to taste to make healthy chips (I prefer Cajun spice)

Slice raw into rounds and use as a replacement for bread or crackers in appetizers

Can be pickled like cucumbers or asparagus

Seeds can be consumed raw or roasted as a snack, added to salads, cereal or baked goods

Squash blossoms can be stuffed with filling and lightly fried for an appetizer or snack
