Canning Tomato sauce #850098

Asked September 15, 2023, 9:40 PM EDT

Is there a recommended recipe for canning standard tomato sauce in 1/2 pint jars? I can not find recommended processing time and amount of lemon juice to add to smaller jars. I canned 1/2 pints using the recommended guidelines for pint jars without any adjusted time or amount of acid. I am wondering if this was correct?

Expert Response

Recipes for canning tomato sauce at both the National Center for Home Food Preservation and in the USDA's Complete Guide to Home Canning call for pint and quart size jars. Canning your tomato sauce recipe in 1/2 half pint jars and using the recommendations for pint size jars is correct, smaller jars can be used but not larger jars.

For additional recommendations on canning tomatoes, see the USDA's Complete Guide to Home Canning or the National Center for Home Food Preservation

You're welcome. I also want to mention an additional food safety resource - our food safety hotline. The hotline runs Monday - Friday from 9am - 5pm, call<personal data hidden> to connect with a food safety educator from MSU Extension.

Wow, thank you again. I didn't know that was a resource. I will add it to my contacts and put it in my canning book as well.  I appreciate the help.
