Is it safe to cook whole plums or peaches with pits in them?

Klamath County Oregon

Expert Response

As long as the pit is not cracked or broken during cooking it is safe.  There is an approved canning recipe where you can whole plums with the pits still inside.  What are you doing with the cooked peaches and plums?  The concern with broken or cracked pits is the pits contain cyanide compounds but those are only released when the pit is broken or crushed up.  Heating the pit whole does not release the toxins.
