I compost all my kitchen waste, we've taken to separating the coffee grounds from the other trimmings etc. they are too wet and the container is always very soggy. I've been wondering if mixing grounds with garden dirt or purchased potting soil as a seed starter is a good idea.

Yes, but give that garden dirt time to compost the grounds before using it. Using coffee grounds in seed starter would likely stunt the baby plants. See this web article.
