Canning jars: caps & rings vs bail-type clamps #819546

Asked January 31, 2023, 6:45 PM EST

Do the old fashioned canning jars that use a wide rubber gasket and clamps on either side of a glass lid hold a vacuum long-term as well as the modern cap and ring systems, both for pressure canning and for water bath canning? Thanks!

Expert Response

Hi Sharon. The two-piece metal lid and screw band system was developed to improve upon the poor sealing rate of the old canning jar with separate gasket and bail over the lid. In recent tests by the National Center for Home Food Preservation, the two-piece metal lid system showed a 100% sealing rate with strong vacuum when processed according to directions.
If you have some of these jars you might be able to use them for pantry storage, or non-canned food storage items.
