Hi Roger,
I would not recommend canning your salad dressing. Commercially they have specific recipes and methods and preservatives for preserving salad dressings. To my knowledge there are or researched based recipes for home canning. We have very few researched based recipes that include oil in the canning process.
The heat process on water bath canning could also change the quality oil in the product.
