I vacuum packed un-blanched corn on the cob with some husk remaining. Both ends were trimmed prior to vacuuming. I used a commercial chamber vacuum machine. When I went to open a package for use the corn cob was soggy and the kernels were as well. Any suggestions on how to better preserve corn on the cob for next harvest?

Know a lot of people think you do not need to blanch corn before freezing, however the quality will be better if you blanch first to destroy the enzymes that will continue to mature the corn and change flavor and texture. I would suggest next time removing husk and blanching 9-10 minutes depending on size of the ears. Cool immediately. I like to flash freeze mine first and then vacuum seal or wrap individual ears in plastic wrap and then put in freezer bags. Frozen corn on the cob will never be as good as fresh but in the winter it is fun to have a few ears. The freezing breaks down the cells of the corn as well as the cob so they become more soggy. Blanching will destroy the enzymes that effect the flavor and texture. It is not a safety issue not to blanch but the quality will be much better.
Personally I really prefer to blanch the corn, cool ears and cut it off the cob. It saves freezer space and the quality is much better in my opinion. Frozen corn is one of our family favorites.
