Spanish lavender yellow leaves #805729

I rescued a small Spanish lavender tree topiary from a big box store that had been neglected and was all but dead from under watering. I deadheaded it and repotted it and it seems to be doing fine with new growth everywhere. However the old leaves are hanging on and have turned yellow. I want to know if I can take those leaves off (by plucking or snipping?) or should I let them run their course and hopefully they will drop off on their own.

Thank you so much for the prompt response. I just recently put the plant in full sun and I think its helping speed up the dying process. I didn't realize some of the leaves had turned brown and black until I took the photo. Duh! They were yellowing for ever, I wanted to get them off and let the new growth be seen. I'm so excited about my new hobby, gardening. I retired in May and I'm all over it, can't get enough. I also successfully propagated the clippings from the lavender. I also bought an african violet last January from HyVee of all places and it lost its blooms and it is now blooming all over the place again. I could go on and on but I'm sure it's too much. Thank you for words of encouragement, I'm just tickled to death. O, I did a straw bale garden for first time this year and it's been successful. Next year, raised beds and a green house in the future. I hope I can pick your brains again in the future when I get stuck. What a wonderful resource. Thanks again!
