Freezer jam issue #794760

Asked June 07, 2022, 4:07 PM EDT

My freezer jam did not set. I used Certo And follow the directions to a T. Any suggestions on how I can fix it. It’s almost like it turned my jam into juice. Thank you Jahnette

Expert Response

Sorry to hear about your jam not setting up.  Below are the suggestion for remaking it from USDA Complete Guide to Canning.  Here are a few causes for why the jam might not have set up.
Did you check the expiration date on the pectin.  Liquid pectin can be very sensitive especially if it was stored where it is warm.   Also did you use fresh berries or frozen.  Sometimes if you use frozen berries they don't measure the same as fresh.   Also the way you mash them can make a difference.  Another problem is sometimes the sugar is not completely dissolve.  How long did you wait.  It can take up to 24 hours for some jams to set up.

Hope that helps

To remake uncooked jelly or jam with liquid pectin

Remake a trial batch using 1 cup of jelly or jam first. Measure jelly

or jam to be remade. Do not remake more than 8 cups at one time.

  1. In a bowl, mix jelly or jam and for each 1 cup of jelly or jam, add 3 Tablespoons sugar and 1½ teaspoons lemon juice.
  2. Stir well until sugar is dissolved (about 3 minutes).
  3. Add 1½ teaspoons liquid pectin per cup of jelly or jam and stir until well blended (about 3 minutes).
  4. Pour into clean containers. Cover with tight lids. Let stand in refrigerator until set. Then store in refrigerator or freezer.
