Pressure Canning refried beans #768070

Asked August 19, 2021, 12:13 AM EDT

I have a refried bean recipe we love which is actually just mashed beans, onion, garlic, jalapeño and spices. No fat or anything else added. Is it safe to pressure can these? I can only find recipes for canning whole beans so I’m not sure what the processing time should be if it is, in fact, okay to pressure can. Thank you for your help!

Expert Response

There are no research-based recipes for canning refried beans safely. Probably because mashing the beans up would make them too thick for heat to penetrate into the center of the jar in order to kill all of the harmful bacteria and other pathogens.

You could just can the whole beans and then use them to make refried beans when you wanted to eat some. Canning the beans would make them soft and most likely perfect for making refried beans.
