I have a number 10 can of pineapple chunks and I need a small amount for a recipe, can I recan the rest of the jar and if so how?

We do not recommend that any foods be canned again. The first time they are processed the texture and density changes, impacting the heat transfer so we don’t have instructions to safety re-can them in that changed condition. In addition, reprocessing them is quite destructive to the quality.

Canned pineapple freezes well.
