Expert Response

You can use lemon cucumber in place of pickling cukes in sweet pickle relish and also they make great bread and butter pickles.  Because they are grown for eating fresh they will not be as crisp as pickling cucumbers,  but safety wise they can be substituted and make a tasty pickle.  I have made bread and butter pickles using them as well as relish and have been satisfied.

I would go to the OSU Food Preservation website and down load PNW 355 Pickling Vegetables and follow the bread and butter pickles and sweet relsih recipes.  The website is http:/extension.oregonstate.edu/fch/food-preservation.  The OSU Food Preservation Hotline is also open now M-F from 9 am - 4 pm. until Mid October.  Certified Master Food Preservers are available to personally answer your questions.  Their number is <personal data hidden>.
