Fall beans #484922

Asked September 14, 2018, 7:04 PM EDT

My uncle, the late John Wilder of Harlan County, gave me beans that are very close to those referenced in An Ode to Fall Beans (https://growappalachia.berea.edu/2013/10/21/ode-fall-beans-seeds/). I have been growing them since, both as a fresh bean and dried. My question is do you know of a recipe for canning the beans while they are still in the fresh stage and not dried? My mother was born in Harlan County. My father was born in Letcher County.

The National Center for Home Food Preservation has these instructions that they note will be safe for lima, butter, pinto and soy beans that are fresh, not dried.
