Hello. A friend..and it is a friend ... asked about the safety of storing rendered chicken fat at room temperature? I would not consider it safe?

Hi Jacqueline,
Pure tallow and lard can be kept at room temperature, and should be kept away from oxygen (air). After rendering, and filtering the impurities out, you can pour the warm fat right into jars and allow to cool to room temperature. The best storage for quality reasons is refrigeration or freezing, or at least keep as cool as possible. At room temperature rancidity is a more likely.
If there are any bits of chicken left, botulism would be a concern.
