Canning edamame in pods #393872

Asked April 16, 2017, 3:30 AM EDT

I was wondering if you had any advice regarding canning edamame unshelled. All of the advice seems to be to freeze things like snow peas/snap peas on account of how tender they are, or alternatively, shelling things like limas before canning because that's how they're served. Edamame is the odd one out because it's not super tender, but it's traditionally served in the pod. I know they can be frozen, but I'd rather can them and save the freezer space for something else if possible. Shelling them prior to canning is more work AND ruins the eating experience. :)

There are no safe canning instructions for canning any beans in the shells.  These green soybeans could be safely canned after shelling like lima beans, as you have noted.
It's most likely that the shells would insulate the beans and slow heat transfer substantially and unpredictably, so even long processing, resulting in a tough end-product might not make them safe.

There are no safety concerns for freezing, but blanching is suggested. Here are freezing instructions from the Soy Foods Council.  http://thesoyfoodscouncil.com/edamame-how-to-freeze-prepare/
