Thinking of next year, my wife wants to try pot gardening some bok choy. Does it grow seed or root segments? I was thinking start them inside our apartment ( what amount of lead time for later setting out after last frost? )

Bok choy is a cool season annual vegetable in the same family as cabbage. It is grown from seed and can be started indoors. Germination takes place within 7-10 days. Start your transplants inside four to six weeks before the last frost date. Wait until after the last frost date to transplant bok choy because if young plants are exposed to frost or a week of nighttime temperatures below 50 F. they may bolt prematurely. It grows best in full sun to part shade, requires well-drained soil and consistent moisture. Bok choy takes about 45-50 days to maturity.
Do you have a quality seed source in mind? Perhaps in Rochester area....
I'm not familiar with the stores in the Rochester area, but a store that carries Burpee seeds may have it. Burpee has bok choy seeds. You may have to purchase them online if you can't find them locally. I checked with Seed Savers Exchange, a great source for heirloom seeds, but they do not carry bok choy seeds. Bok choy is also called pak choy and Chinese cabbage, so you may find seeds under those names.
