Can I dethaw and can salmon that has been frozen for a week?

Yes, you can safely can frozen salmon.  Just thaw it before you put it in the jars.  Remember to process it in a pressure canner for 100 minutes for pints and 1/2 pints at 10# pressure for weighted gauges and 11# for dial gauges.
