Which vegetables give off ethylene gas? Scallions? anything else? Should they thus be stored in the fruit bin in the fridge?

This question has no simple answer. Ethylene gas is a natural hormone and is produced in all higher plants, however, production of ethylene varies with the type of tissue, the plant species, and also the stage of development. It is well known that it stimulates fruit ripening, but it has many other functions in plants (see http://www.plant-hormones.info/ethylene.htm). Some fruits produce more ethylene than others and some plants are considered sensitive to ethylene gas. For example, ethylene producing items (such as apples, avocados, bananas, melons, peaches, pears, and tomatoes) should be stored separately from ethylene-sensitive ones (broccoli, cabbage, cauliflower, leafy greens, lettuce, etc.).See also http://postharvest.tfrec.wsu.edu/pages/PC2000F for more information.
