It seems like corn tortillas can keep fresh a long time in fridge.  They come out too mushy when frozen.  thanks!

Expert Response

According to NMSU's Publication, Storing Food Safely, (Publication E-118) revised most recently by Dr. Carol Turner, the storage times for corn tortillas depends on the ingredients, but most will store for 2 weeks in the refrigerator.  To ensure proper quality when freezing corn tortillas, remove the tortillas from their original container and rewrap using moisture- and vaporproof paper, plastic freezer wrap, or a freezer container.  This will keep moisture out so that the defrosted tortillas will not be mushy when they are defrosted.  By the way, be sure to label and date your tortillas before freezing them.  They should keep 2-3 months in the freezer.  I hope this helps and answers your question!
