Canning in oil
I canned dried sausage in salt and olive oil ten years ago. No mold or visible signs of deterioration. I recently opened a glass canning jar. Sausage looked and smelled the same way it did ten years ago. I tasted a very small piece. It tasted like it was fresh. Is this safe to eat.

Unfortunately Ron, we can only go by what the USDA research says that is home canned foods should only be kept 12 to 18 months. There is no way of telling if the product you canned is safe to eat, since any type of microorganisms cannot be seen, smelled or tasted. I am sorry, I can only suggest it is no longer a safe product to consume
If the canned meat is cooked to an internal temperature of 200 + degrees, will that kill all of the microorganisms and then be safe to consume.
Heating will not kill the microorganism spores that may be in the product.
