where can I learn basics about vegetables

Health problems have forced me to find plant based diet alternatives but I know nothing about vegetables. Do you know of a basic vegetable course I could take online where I could learn about vegetables. I especially need iodine. I know about seaweed kelp but I need to find other plant based sources for iodine other than salt due to high cholesterol and heart issues. I am 62 yrs old and do not want to get stroke or heart attack.

It is very important that you see a Registered Dietician (RD) to receive detailed information regarding your specific dietary needs, especially related to iodine. There are many RD's in the Durham area.
