Canning Vegetable stock
Is it unsafe to use vegetable scraps such as onion skins, carrot and potato peels to make stock for canning?

Thank you for your question. I would not use vegetable scraps for making stock to can. Ingredients for a canned product should be fresh and of optimal quality. Vegetable scraps such as onion skins, carrot and potato peels wouldn't be the optimal quality for making a stock for canning.
