Cover crop thru winter zone 6

What can I plant to add nitrogen and other nutrients to my soil over winter and till in around April-May. If it’s eatable even better. It’s just a garden plot. If it deters bugs even better. Mainly growing corn, beans, peas, peppers, cucumbers, tomatoes and melons.

One of the best cover crops for vegetable gardens in Kentucky is rye grass - annual rye grass. The seeding rate is 3-4 lbs per 1,000 sqft and should be seeded in September-November. It may winter kill but if seeded early enough in the fall (early September) it will produce good top growth before cold weather arrives. If it does winter kill it will still provide protection to the soil.
